What’s more down-home than meatloaf? This takes most of the spices you have in your cupboard to create a complex but comforting meal your family will enjoy on a winter night.

Ingredients

Serves: 8
  • 2 1/3 pounds ground beef
  • 3/4 cup water
  • 3 eggs
  • 3/4 cup ketchup
  • 3/4 cup salsa
  • 1/4 cup non-fat dry milk
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1 celery stalk, chopped
  • 2 tablespoons worcestershire sauce
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons garlic
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper
  • 1/2 teaspoon crushed oregano
  • 1/2 teaspoon crushed thyme
  • 1/2 teaspoon crushed sweet basil
  • 1/2 teaspoon onion powder
  • 1/2 cup ketchup, set aside until end

Preparation method

Prep: 10 mins | Cook: 1 hour | Extra time: 20 mins, cooling

1. Preheat oven to 375 degrees F and coat a 9×9-inch baking dish with nonstick cooking spray.
2. Place all ingredients into a mixing bowl and mix thoroughly together. Press into baking dish.
3. Cover and bake 45 minutes, then uncover and spread 1/2 cup of ketchup evenly on top. Cook 15 minutes uncovered.
4. Remove, allow to sit for 15 to 20 minutes, cut, and serve.
