Ingredients
Serves: 6- 2 1/2 to 3 pounds coarsely ground beef
- 2 white onions, coarsely chopped
- 6 cloves fresh garlic, coarsely chopped
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can diced tomatoes with green chilies, undrained
- 1 (15 ounce) can diced tomatoes with jalapeno peppers, undrained
- 1 (16 ounce) jar medium-spicy chunky salsa
- 1 (6 ounce) can tomato paste
- 2 tablespoons unsweetened cocoa or 1 bar of baking chocolate
- 1 cup strong brewed coffee
- 1 package chili seasoning mix
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- Dash of cayenne pepper
Preparation method
Prep: 10 mins | Cook: 8 hours1. Brown beef, onions and garlic in a large Dutch oven or similar pot. Drain and transfer to a 6-quart slow cooker.
2. Add remaining ingredients, stir well to combine, and cover. Cook on LOW for 8 to 10 hours, stirring once.Tip
To thicken the chili, combine 2 tablespoons of cornstarch and 2 tablespoons of cold water in a small bowl. Slowly stir cornstarch mixture into stew with slow cooker set to HIGH, then repeat until desired thickness is reached.
Alternate MethodCook on HIGH for 4 hours.
