Ingredients
Serves: 12- 1 (3 pound) boneless beef roast, cut in half
- 1 (14 ounce) can beef broth
- 2 cups green enchilada sauce
- 1 (4 ounce) can chopped green chiles
- 1/2 cup Mexican hot tomato sauce
- Salt and pepper, to taste
- 1/2 teaspoon garlic powder
- 1 cup cotija or parmesan cheese (optional)
- 12 large flour tortillas
Preparation method
Prep: 15 mins | Cook: 10 hours1. Put the beef roast in your slow cooker and pour the beef broth over the meat. Set on Low and cook for 9 hours (could also do overnight, but who sleeps for nine hours?)
2. When the cooking time is over, turn the slow cooker off and remove the lid, remove the beef, let it sit for about 15 minutes. This will allow juices to settle and make it less likely that you’ll burn yourself when you shred the meat. When the 15 minutes are up, shred with the beef with two forks into bite-size pieces. Dip a measuring cup into the slow cooker and remove 1/2 cup cooking juices. Reserve these juices. Discard the rest.
3. Put the shredded beef back in the slow cooker. Add the reserved liquid, and the rest of the ingredients, except for the tortillas. Cook on Low for 1 hour.
4. Spoon beef mixture onto tortillas. Top with the cheese, if you have it. Roll up tortillas and serve!
