Ingredients
1 | potato, peeled and diced |
200 g | carrots, sliced |
50 g | leek, sliced |
1 tsp | oil |
400 ml | vegetable stock |
40 g | crème fraîche |
salt and pepper | |
ginger powder | |
cayenne pepper |
Instructions
In a pan heat the oil. Sauté the potatoes, carrots and leek for 2 minutes. Pour in the stock and bring to a boil. Reduce the heat and cook for 20 minutes.Purée the soup with a hand blender. Stir in the crème fraîche and season to taste with salt, pepper, ginger powder and cayenne pepper.
