Carrot coconut soup recipe details
Ingredients
2 medium | onions, chopped |
3 tbsp | unsalted butter |
500 g | carrots, peeled and sliced |
400 ml | coconut milk |
350 ml | vegetable stock |
1 tsp | salt |
4 tsp | fresh lime juice |
4 tsp | cilantro, finely chopped |
Instructions
In a large, heavy saucepan melt the butter over medium heat. Add the onions and sauté, until softened, about 4 minutes. Stir occasionally. Add the carrots and sauté 4 more minutes.Add the coconut milk, stock and salt, and bring to a simmer. Cover pot and cook until vegetables are very tender, about 25 minutes.
Puree the soup in a blender and then return the soup to the pot. Stir in the lime juice.
Divide the soup among four serving bowls and garnish with a teaspoon of cilantro.
