Ingredients

2 medium onions, chopped
3 tbsp unsalted butter
500 g carrots, peeled and sliced
400 ml coconut milk
350 ml vegetable stock
1 tsp salt
4 tsp fresh lime juice
4 tsp cilantro, finely chopped

Instructions

In a large, heavy saucepan melt the butter over medium heat. Add the onions and sauté, until softened, about 4 minutes. Stir occasionally. Add the carrots and sauté 4 more minutes.

Add the coconut milk, stock and salt, and bring to a simmer. Cover pot and cook until vegetables are very tender, about 25 minutes.

Puree the soup in a blender and then return the soup to the pot. Stir in the lime juice.

Divide the soup among four serving bowls and garnish with a teaspoon of cilantro.
