- Ingredients:
- 1-2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 Tablespoons wheat germ
- 2/3 cup sugar
- 1/2 cup vegetable oil
- 2 eggs, well beaten
- 1-1/2 cups grated zucchini (keep peel on)
- 1 teaspoon apple juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon real vanilla extract
- 3/4 cup chopped dates
Preheat oven to 350 degrees. Grease 1 large or 2 small loaf pans or 1 bundt pan. Sift together the flour, baking soda, and salt. Mix in the wheat germ and set aside. In a large bowl, mix together the sugar and oil. Add the eggs and beat well. Mix in the grated zucchini, apple juice, spices, and vanilla extract. Add the flour mixture and dates and beat well. Pour into pan(s) and smooth top with a spatula.
Bake for 25 to 50 minutes (depends on pan(s) used). Check after 25 minutes for small pans, 35 minutes for large pan. Bread is done when the top is browned and a toothpick inserted in the center of loaf comes out clean. Cool on a rack for at least 15 minutes before removing from pan(s). Delicious for breakfast or any time, served warm with butter or cream cheese.
