Ingredients
500 g | boneless thick rib of pork, cubed |
1 tbsp | olive oil |
1 large | onion, chopped |
1 clove(s) | garlic, chopped |
1 tbsp | ginger, freshly chopped |
2 tbsp | mild curry powder |
1 | clove |
4 | cardamom pods |
1 stick(s) | cinnamon |
250 ml | uncooked rice |
1 large can(s) | pineapple rings, 410g |
500 ml | meat stock |
3 tbsp | wine vinegar |
1 ½ tsp | salt |
1 tsp | coriander seeds, freshly crushed |
1 | bay leaf |
Instructions
Heat oil in a potjie over charcoal, add the pork and fry turning until brown. Add onion, garlic and ginger and sauté until the onions are lucent. Add curry powder, clove, cardamom, coriander, bay leaf and cinnamon and fry for 2 more minutes.Carefully take out the meat and fill half of the rice into the potjie, flatten and return half of the meat. Cover with the remaining rice and layer the remaining meat on top. Drain pineapple, reserving the juice. Cover the meat with pineapple rings. Heat the pineapple juice together with the stock, vinegar and salt and pour this over the contents in the potjie. Cover and cook over low heat for 90 – 120 minutes or until the meat is cooked and the liquid absorbed.
Serve with chutney of your choice.
