Spelt Pancake recipe

|For the pancakes:|
|200 g||spelt wholemeal flour|
|200 ml||sparkling water|
|For the Filling:|
|450 g||frozen spinach|
|200 g||sheep’s milk cheese|
|nutmeg and pepper|
Mix flour, water, milk, eggs and salt. Let stand for 20 minutes in the fridge. Defrost spinach.
In a frying pan bake 3 pancakes.
Heat spinach and season to taste with nutmeg and pepper.
Fill 2 pancakes with spinach and feta. Cut third pancake in stripes and serve with the filled pancakes.
