Ingredients
120 g | butter |
150 g | flour |
2 | egg yolks |
4 medium | eggs |
salt and pepper | |
250 g | courgette, sliced |
150 g | red onions, sliced |
200 g | canned mussels |
1 bunch(es) | parsley, chopped |
200 ml | milk |
100 g | freshly grated Cheddar cheese |
Instructions
In a bowl combine the butter with flour, egg yolks, salt and 3 tablespoons of ice water. Quickly knead with cold hands until well combined. Wrap the shortcrust into foil and refrigerate for 30 minutes.Drain the mussels.
Roll out the shortcrust pastry to a round and line a buttered tart form with the pastry. Arrange the courgettes, mussels and onions on top.
Mix the milk with the eggs, cheese and parsley. Season with salt and pepper. Evenly pour the mixture over the tart. Bake in the preheated oven at 180°C for 45 minutes.
