Ingredients
Serves: 4- 1 tablespoon extra virgin olive oil
- 1 1/2 pounds canned chopped tomatoes
- 4 garlic cloves, crushed
- 2 teaspoons finely chopped fresh rosemary
- Sea salt and black pepper, to taste
- 2 teaspoons sugar
- 8 ounces sliced Spanish chorizo
- pinch red chili flakes (to taste)
- 3/4 cup thick cream
- 2 tablespoons fresh chopped parsley
- 1 pound dried pasta (any shape)
- 1/2 cup grated Parmesan cheese
Preparation method
Prep: 10 mins | Cook: 20 mins1. Bring large pot of water to boil and add pasta. Cook 7 to 9 minutes or until al dente; drain.
2. Meanwhile, heat olive oil in large saucepan. Add tomatoes, garlic, and rosemary. Season with desired salt and pepper. Add sugar to heighten sweetness of tomatoes.
3. Simmer for 5 minutes, then add sliced chorizo, chili flakes, cream, and half the parsley.
4. Simmer until the mixture has reduced by about half, stirring frequently. This will take about 10 to 15 minutes.
5. Season to taste, and serve with the cooked pasta. Garnish with the remaining parsley and the Parmesan cheese. Fantastic!!
