Chorizo stack pila de chorizo recipe details
Premium chorizo sausage with tomatoes, basil, and mozzarella, stacked together. Place them in the middle of a small mixed leaf salad and drizzle with some extra virgin olive oil.

Ingredients
Serves: 4- 16 (2mm) slices of premium chorizo sausage
- 4 mozzarella balls
- 4 large tomatoes
- basil leaves
- cocktail sticks (to stop them falling apart)
Preparation method
Prep: 10 mins | Cook: 10 mins1. Preheat oven to 400 degrees F (200 degrees C).
2. For each stack you make,take 4 slices of your chorizo (Spanish is best,for the USA try the Mexican style,or if you can get it chorizo from Argentina.),1 tomato sliced into four and one mozzarella ball sliced into four thick slices, and a few basil leaves.
3. The base must be as follows: basil,tomato,mozzarella chorizo,and continue this till your slices are used,this allows the flavor from the sausage to enter the cheese and tomato.
4. Now put your cocktail stick through the middle of your stack just to hold it together while cooking. Place on a baking tray.
5. Bake for a max of 10 minutes(have a peek after 5 minutes as some ovens are hotter than others,you will know when they are near done as the cheese will just have started to melt on the outside,if you let them go too far they will just die !!!!)
6. Take them off of the tray and let them rest for a minute or so, then take the cocktail stick out,they should now hold together.
