Ingredients
Serves: 6- 1 1/2 pounds boneless, skinless chicken breasts
- 1/2 cup Italian salad dressing
- 1 onion, chopped
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 (15 ounce) can crushed tomatoes
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 tablespoon minced fresh parsley
- 1 teaspoon minced fresh oregano
- 1 teaspoon brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 9 ounces uncooked spaghetti
- 1/4 cup grated Parmesan cheese
- 6 tablespoons shredded mozzarella cheese
Preparation method
Prep: 20 mins | Cook: 20 mins | Extra time: 30 mins1. Place chicken breasts between two layers of plastic wrap. With a rolling pin, pound meat to make it 1/2-inch thick. Combine with salad dressing in a large plastic resealable bag, seal, and refrigerate to marinate for 30 minutes.
2. Coat a skillet with nonstick cooking spray and heat the olive oil in it over medium heat. When the oil is hot, add the onion and cook for about 5 minutes. Add the garlic and continue to cook until garlic becomes fragrant, about 1 minute.
3. Add tomatoes, parsley, oregano, brown sugar, salt, and pepper to the onion in the skillet. With the heat still over medium, bring the mixture to a boil. Turn the heat to low and simmer for about 15 minutes to thicken.
4. While sauce is simmering, heat grill to medium and lightly oil grate. This would be a good time to boil a pot of water for the spaghetti.
5. Remove chicken from marinade and place on grill. Cook for about 6 minutes per side until chicken is at least 160 degrees F internally and no longer pink in the middle. Cool slightly and cut into bite-size strips.
6. While chicken is cooking, cook the spaghetti in the pot of boiling water according to package directions. Drain.
7. On each plate, place some spaghetti, strips of chicken, and plenty of sauce. Sprinkle with Parmesan and mozzarella cheese.
