- Ingredients
- 3 medium Granny Smith apples
- 1 small to medium red onion
- 1 medium bell pepper
- 1 jalapeno pepper, minced
- 1/3 cup dried currants
- 2 Tablespoons fresh cilantro, finely chopped
- 2 teaspoons grated orange zest
- 3/4 cup fresh orange juice
- 2 Tablespoons Dijon mustard
- 1 Tablespoon ground cumin
- 1/2 cup vegetable oil
- 1 Tablespoon dark sesame oil
Dice apples, onion, and bell pepper into 1/4-inch pieces and combine with currants, minced jalapeno, chopped cilantro, and grated orange zest.
In blender, combine orange juice, Dijon mustard, and cumin. Process until smooth, then gradually add oils in a thin stream until thickened. Toss with apple mixture and refrigerate at least 2 to 4 hours so that flavors may blend. Serve with tortilla chips.
