Ingredients

Serves: 6

• 1 1/2 cup water
• 2 medium potatoes diced
• 3 stalks of celery diced
• 1 medium onion diced
• i can creamed corn
• 1 can whole kernel corn drained
• 1 12oz. can condensed milk
• 1 cup heavy cream
• 3Tbsp. Butter
• 2 Tsp. ground black pepper
• 1 jalapeno pepper minced
• 6 oz. shredded reduced fat Cheddar cheese
• 2 Tsp. Scallions

Preparation method

Prep: 15 mins | Cook: 40 mins

1. In a large saucepan combine water, potatoes, celery, and onion and bring to a boil.
2. Cover and simmer for 10 min.
3. Add creamed corn, corn, milk, cream, butter, pepper, and jalapeno and simmer for 30 minutes stirring frequently.
4. Add Cheddar cheese and stir until blended.
5. Top with scallions.
