Ingredients
Serves: 9- 1 (2 pound) butternut squash, sliced in half lengthwise and seeds removed
- 1/4 cup butter, melted
- 2 tablespoons brown sugar
- 1 tablespoon chili powder
- 1 tablespoon minced fresh cilantro
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon ground cinnamon
- 1 tablespoon olive oil
- 1 green bell pepper, chopped into 1-inch pieces
- 1 yellow bell pepper, chopped into 1-inch pieces
- 1 red onion, cut into wedges
- 2 cups grape or cherry tomatoes
Preparation method
Prep: 10 mins | Cook: 25 mins1. Place squash in a glass baking dish, peel side up. Pour enough water into the dish to bring the level up to 1/2-inch. Microwave on High for 12 minutes to soften. Cool slightly.
2. Whisk butter together with sugar, chili powder, cilantro, salt, pepper, and cinnamon in a bowl. Peel the squash and chop into small pieces.
3. Pour olive oil into a large skillet and set over medium heat. Cook bell peppers and onion in hot oil for about 8 minutes to soften, then stir in the squash and grape tomatoes. Cook for another 2 minutes.
4. Drizzle with the seasoned butter, toss well to combine, and serve.
