Ingredients
2 cloves garlic
1 medium onion
1 red bell pepper
1 green bell pepper
1 dozen eggs (or equivalent amount of Egg Beateregg substitute)
1/4 pound of your favorite sausage (optional)
2 Tablespoons sour cream
1/2 cup salsa
Grated cheddar cheese
Cilantro and guacamole for garnish
Instructions:

For an easy and eye-appealing weekend brunch, try this tasty recipe.

Saute garlic and onion for 3 minutes. Add diced peppers. Beat eggs and pour into mixture along with the sour cream. Cook until slightly firm, but still “soupy”. Mix in diced sausage, if desired. Transfer to a baking dish. Top with salsa and cheese. Bake at 350 degrees for 20 to 30 minutes. Garnish with guacamole, salsa, and/or cilantro.
