- Ingredients
- 8 eggs
- 1-1/2 cups milk
- 1-1/4 cups flour
- 4 Tablespoons sugar
- 1/2 teaspoon salt
- 1 stick of butter
- 2 cans sliced apples (not apple pie filling)
- 1/4 cup brown sugar
- 1/2 cup white sugar
Heat oven to 425 degrees. Mix first six ingredients together in a large mixing bowl. Melt the butter in the oven in a 13 x 9 x 2-inch glass baking dish. Add the sliced apples to the baking dish. Mix so the butter covers the apples, and return to the oven for an additional 5 to 10 minutes (just so the apples get nice and buttery and smell wonderful).
Pour batter over apples and sprinkle with brown sugar/white sugar combination. Bake for 50 minutes or so until nice and puffed and lightly browned. Let sit for at least 8 minutes before cutting. Pancake will fall a little – does not affect the flavor. Serve with a dollop of whipped cream and lots of love.
