Fresh pea salad recipe details
Ingredients
½ liter(s) | water |
500 g | peas, before shelling |
150 g | rocket |
25 g | fresh mint, chopped |
1 ½ tbsp | lemon juice |
1 tbsp | extra virgin olive oil |
½ tsp | salt |
freshly ground black pepper, to taste | |
60 g | Pecorino cheese, freshly grated or better, shavings |
Instructions
Bring the water to a boil in a medium saucepan. Add peas and cook for 1 minute, then drain and plunge the peas into ice water; drain again.Combine peas, rocket and mint in a large bowl. Add lemon juice, olive oil, salt and pepper and toss well. Sprinkle with cheese and serve immediately.
