Ingredients
1 ½ l | beef stock |
1 | onion |
2 | spring onions |
400 g | white cabbage, fresh |
4 | tomatoes |
8 | gherkins |
1 glass(es) | gherkin pickle |
150 g | cooked ham or salami |
4 | Frankfurter/Wiener sausages |
50 g | butter |
2 tbsp | tomato puree |
salt and pepper | |
2 pinch(es) | allspice (pimento) |
1 | bay leaf |
1 | lemon, untreated, juiced |
To garnish: | |
sour cream | |
4 tbsp | diced beetroot |
Instructions
Finely chop the onion and cut the spring onions into rings. Remove the stem and midribs from the white cabbage, then finely cut the cabbage in small stripes. Scald the cabbage with approximately 1 litre of boiling water, then drain. Place the tomatoes for 30 seconds into boiling water, then chill with cold water and remove the skin and seeds. Finely chop the tomatoes. Dice the gherkins and cut the ham and the sausages into bite-sized pieces.Heat the butter in a pan and sauté the all of the onions. Add the tomato purée, the tomatoes and the cabbage and sauté for a few minutes. Add the beef stock bring to a boil and simmer for 10 minutes. Add the gherkins, ham, sausages. Season to taste with salt, pepper, allspice, lemon juice and gherkin pickle. Simmer for another 5-10 minutes, then taste again and correct if necessary.
Ladle the soup into soup bowls and garnish with sour cream and diced beetroot.
