Ingredients
100 g | marzipan |
50 | orange liqueur, e.g. Cointreau |
2 | eggs |
200 g | butter |
100 g | sugar |
150 g | flour |
50 g | cornstarch |
2 | lemons, grated rind of the 2 and juice from 1 |
50 g | icing sugar |
Instructions
Mix the marzipan with the orange liqueur until smooth. Add eggs, sugar, lemon peel and soft butter and mix well. Add flour and cornstarch and stir until well combined. Spoon the mixture into the cups of a greased muffin tin and bake at 180°C for 25 minutes.Mix the icing sugar with lemon juice. Prick the cooled muffins with a tooth pick and trickle the syrup over the muffins. Let soak over night.
These muffins taste best after one day and they keep soft and fresh for up to 5 days.
