Ingredients
3 | eggs, separated |
30 g | sugar |
100 g | white couverture |
80 g | Christmas stollen, ground |
1 pinch(es) | spice mixture for stollen (such as cardamom, cinnamon, cloves, mace, lemon peel, coriander, ginger, anise |
2 pinch(es) | orange, grated peel |
200 ml | whipping cream |
120 g | rum pot fruits |
80 g | sugar |
100 ml | orange juice |
10 g | cornflour |

Instructions
Whisk the cream until stiff. Beat the egg whites with half of the sugar until stiff. Whisk the egg yolks with the remaining sugar until creamy.Chop the couverture and melt over a hot water bath. Take from water bath and stir in the egg yolks. Fold in the whipped cream, ground stollen, orange peel and the stollen spice mixture. Fold in the beaten egg white. Pour the mixture into a loaf tin, lined with cling film. Freeze overnight.
About 20 minutes before serving, remove the parfait from the freezer to thaw a bit and thus improve in taste.
Caramelize the sugar in a pan. Pour in the orange juice and some liquid from the rum pot. Add the spices in a spice ball and boil down. Finally add the fruits and cook briefly until hot.
To serve:
Turn the stollen parfait out of the tin and cut into slices. Serve ever 1-2 slices on top of some fruits. Garnish with mint and serve immediately, dusted with icing sugar.
