Ingredients
For the dough: | |
100 g | sugar |
3 medium | eggs |
1 pinch(es) | salt |
2 tbsp | lukewarm water |
75 g | flour |
20 g | corn starch |
25 g | cacao |
For the Filling: | |
250 g | sour cherries |
3 tbsp | cornstarch |
4 tbsp | sugar |
75 ml | cherry juice |
400 g | cream |
40 ml | kirschwasser |
50 g | dark chocolate |
Instructions
Grease a 20 cm springform and cover the bottom with a backing paper.Dough:
Separate eggs. Beat egg whites with salt until stiff. Beat yolks with water and sugar until thick and foamy. Place yolks on top of egg whites. Sieve flour, corn starch and cacao on top and lightly fold in. Fill in springform. Bake at 160°C (air circulation) for 25-30 minutes. Let cool and remove from the springform.
Filling:
Put some cherries aside for decoration. Mix cornstarch with 2 tablespoon cherry juice. Bring rest of cherry juice with 2 tablespoon sugar to the boil. Add cherries and bring to a boil. Stir in mixed corn starch and boil up again. Let cool. Cut the sponge in three parts. Beat cream with rest of sugar until stiff.
Brush bottom with a thin layer of cream. Fill rest of cream in an icing bag. Apply 3 rings of cream. In the gaps between the cream rings place half of cherry filling. Cover with the middle bottom. Soak the middle bottom with 20 ml Kirschwasser.
Again apply 3 cream rings and fill the gaps with cherries. Cover with the third sponge part, soak it with 20 ml Kirschwasser. Apply rest of cream on top and around the gateau.
Produce chocolate flakes with the help of a vegetable peeler. Apply the chocolate flakes around the sides of the gateau.
Decorate the upper side with cherries and chocolate flakes. Place in a fridge for at least 2 hours before serving. If you want this gateau for children, you can use cherry juice instead of Kirschwasser.
