Black forest gateau recipe details
Ingredients
2 medium | eggs |
50 g | flour |
1 tsp | baking powder |
50 g | sugar |
25 g | dark chocolate, melted |
glass(es) | sour cherries |
5 tbsp | cherry juice |
2 tbsp | hot water |
2 tbsp | custard powder or cornstarch |
75 ml | whipping cream |
Instructions
To make the sponge:Whisk egg whites until stiff and leave in the fridge whilst whisking egg yolks with sugar and hot water for a few minutes until light and creamy, then stir in melted chocolate. Sift flour and baking powder onto egg mixture and carefully mix everything together with the egg whites.
Pour dough onto a small round baking dish layered with baking paper and bake in the oven on 180 degrees for around 15 minutes. To avoid collapsing of the sponge, leave it in the oven for another 10 minutes after turning off oven. After it is cooled slice sponge horizontal into equal rounds.
For the filling:
Cook some of the cherry juice with the starch or vanilla powder until it thickens, mix in enough cherries to cover the dough. Place cherry mixture onto one half of the sponge and cover with whipped cream, place 2nd sponge on top and layer the remaining whipped cream on top.
Decorate with some more cherries or chocolate flakes
