Ingredients
Serves: 6- 3 tablespoons olive oil
- 2 onions, finely chopped
- 2 ribs celery, finely chopped
- 2 cloves garlic, finely chopped
- 1 (14 1/2 ounce) can diced fire-roasted tomatoes
- 1 (12 ounce) jar roasted red peppers, drained
- 2 tablespoons paprika
- Salt and pepper
- 1/2 cup unseasoned breadcrumbs
- 1 egg, beaten
- 1 1/2 pounds ground turkey
Preparation method
Prep: 30 mins | Cook: 6 hours1. Pour olive oil into a large skillet and place over medium heat. Cook onions, celery, and garlic in hot oil for 6 to 8 minutes to soften. Pour 1 1/3 cups cooked onions onto a plate and set aside.
2. Pulse tomatoes and roasted red peppers in a food processor until smooth, then pour into the skillet with remaining onions and sprinkle with paprika, salt, and pepper. Bring to a boil, then pour into a slow cooker.
3. In a mixing bowl, combine 1 1/3 cup cooked onions from Step 1 with breadcrumbs, egg, 1/2 teaspoon salt, 1/4 teaspoon pepper, and ground turkey. Shape into 1 1/2-inch balls and place meatballs in slow cooker.
4. Cook on LOW for 6 to 7 hours.
