Teriyaki sauce kicks-off the flavoring for this hearty, slightly sweet slow cooker beef stew. Never had honey in a stew? Time to try it. Inspired by Bobby Terrell’s “Hearty Beef Stew II.”

Ingredients

Serves: 4
  • 1 pound beef stew meat, cut into 3/4-inch pieces
  • 3/4 cup teriyaki sauce
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 3 stalks celery, sliced
  • 1/4 cup all-purpose flour
  • 2 tablespoons paprika
  • Salt and freshly ground pepper, to taste
  • 5 red potatoes, cubed
  • 3 carrots, sliced
  • 1 onion, chopped
  • 1 cup sliced mushrooms
  • 3 tablespoons honey
  • 2 cups beef broth, or as needed

Preparation method

Prep: 30 mins | Cook: 8 hours

1. In a large plastic resealable bag, combine beef and 1/2 cup teriyaki sauce. Seal bag, turn to coat, and refrigerate for 1 hour to marinate.
2. Transfer the marinated beef and any teriyaki sauce left in the plastic bag to a skillet. Cook over medium heat until beef is browned on all sides, about 10 minutes.
3. In a small bowl, mix together flour, paprika, salt, and pepper; sprinkle over beef stew meat, covering all parts generously.
4. Place potatoes, carrots, onion, and mushroom in a 6-quart slow cooker; drizzle with honey, 2 cups beef broth, and remaining teriyaki sauce (about 1/4 cup). Transfer beef mixture to slow cooker over vegetables.
5. Cover and cook on LOW for 8 to 10 hours, until beef and vegetables are very tender. Add more broth if stew looks like it’s drying out.Alternate Method

Cook stew on HIGH for about 4 hours.

Tip

To thicken the stew, combine 2 tablespoons of cornstarch and 2 tablespoons of cold water in a small bowl. Slowly stir cornstarch mixture into stew with slow cooker set to HIGH, then repeat until desired thickness is reached.
