Slow Cooker Beer Me Easy Veal Stew

Tasty tender veal makes an amazing stew. Once you go veal, you may never go back to beef.

Ingredients
Serves: 4- 1 pound stewing veal, cut into 1-inch pieces
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 2 portobello mushrooms, stems removed and caps cut into 1-inch pieces
- 1 onion, chopped
- 2 tablespoons flour
- 1 (12 ounce) bottle dark beer
- 1 tablespoon white wine vinegar
- 1/2 teaspoon dried thyme, crumbled
- 1 pound carrots, peeled and cut into 2-inch chunks
Preparation method
Prep: 20 mins | Cook: 8 hours1. Heat vegetable oil in Dutch oven or large pot over high heat. Sprinkle veal with some of the salt and pepper, then sear in the hot oil, about 4 minutes per batch. Scoop out, put on a plate, and reserve.
2. Add the mushrooms and onion to the pot, and cook over medium heat for about 5 minutes. Transfer to a 6-quart slow cooker and add flour, seared veal, beer, vinegar, thyme, carrots, and a little more salt.
3. Cover and cook on LOW for 8 to 10 hours.Tip
To thicken the stew, combine 2 tablespoons of cornstarch and 2 tablespoons of cold water in a small bowl. Slowly stir cornstarch mixture into stew with slow cooker set to HIGH, then repeat until desired thickness is reached.
Alternate MethodCook on HIGH for about 4 hours.
