Ingredients
Serves: 6- 3 ounces orange juice
- 1/4 cup balsamic vinegar
- 1 teaspoon Worcestershire suace
- 1 teaspoon dried thyme
- 2 garlic cloves, finely chopped
- 1/2 teaspoon salt
- Black pepper, to taste
- 1 1/2 pounds sirloin steak, trimmed of fat
- 2 tablespoons minced shallot
- 1 teaspoon olive oil
- 1 teaspoon unsalted butter
Preparation method
Prep: 20 mins | Cook: 12 mins | Extra time: 1 hour, marinating1. Combine orange juice, vinegar, Worcestershire sauce, thyme, garlic, salt, and pepper in a large plastic resealable bag. Add steak and seal bag. Turn to coat, then refrigerate for 1 hour to marinate.
2. Remove steaks from the bag and transfer marinade to a saucepan. Stir in shallot.
3. Preheat a large cast-iron skillet over medium-high heat and coat with olive oil. Cook steaks in skillet for 12 to 15 minutes, flipping once midway through cooking time, until beef is done to your liking. Let the beef rest on a cutting board for 5 minutes.
4. While steaks cook, make the sauce: set saucepan with marinade and shallot over medium-high heat. Bring to a boil, then simmer for about 4 minutes to reduce. Turn off heat and stir in the butter.
5. Slice steaks against the grain and serve with balsamic vinegar sauce spooned over each helping.
