Ingredients
Serves: 4- Zest from 2 lemons
- 2 cloves garlic, crushed
- 1 cup parsley leaves
- 3/4 cup green olives, chopped
- 1/2 cup basil leaves, chopped
- 3 tablespoons capers
- Zest of 1 orange
- 4 (1/2-inch thick) swordfish steaks, about 2 1/2 pounds total, skinned
- 1/4 cup olive oil
- Salt and pepper
Preparation method
Prep: 20 mins | Cook: 7 mins1. Preheat grill to medium-high.
2. Combine lemon zest, garlic, and parsley in a food processor; chop finely. In a separate bowl, toss the olives with basil, capers, and orange zest.
3. Coat each fish steak with oil, sprinkle with salt and pepper, and rub with the lemon zest garlic mixture. Place on a sheet of wax or parchment paper and cover with a second sheet; use a meat pounder to pound the steaks to about 1/8-inch thick.
4. Cut each steak into about 3×5-inch strips. Coat one side of each strip with olive caper mixture, roll up, and place three each on metal skewers.
5. Grill skewers for about 7 minutes, turning every 2 or 3 minutes.
