Grilled Skewered Hawaiian Chicken Breasts

A soak in pineapple juice spiced up with Asian flavors gives these chicken breasts a sweet and tangy kick. They cook up fast on skewers.

Ingredients
Serves: 6
- 1 1/2 cups pineapple juice
- 1/4 cup soy sauce
- 2 teaspoons minced fresh ginger
- 2 cloves garlic, minced
- 6 boneless, skinless chicken breasts, cut into 1-inch cubes
- Salt and freshly ground black pepper
- 1 (10 ounce) package spring mix greens
- 1 cup green papaya, peeled, seeded, and shredded
- 3/4 cup unsweetened, shredded coconut
- Salt and pepper, to taste
Preparation method
Prep: 20 mins | Cook: 10 mins | Extra time: 3 hours, marinating
1. Combine the first four ingredients in a small bowl to make a marinade. Mix well. Place the chicken breasts in 2 large resealable plastic bags and pour in the marinade. Seal the bags and let marinate for 3 hours.
2. Preheat grill to medium-high.
3. Take out the chicken and drain off any excess marinade. Season the chicken with salt and pepper. Thread the chicken onto the skewers.
4. Put the skewers on the grill. Cook the chicken for approximately 3 minutes per side, or until it’s cooked through.
