Singaporean Fried Noodles with Beef recipe

Ingredients
450 g | broccoli, in florets |
300 g | Chinese noodles |
1 | onion, chopped |
salt and pepper | |
2 | carrots, sliced |
350 g | beef sirloin, cut into strips |
3 tbsp | sesame oil |
1 tsp | curry powder |
ginger powder | |
3 | eggs |
75 ml | milk |
3 tsp | sesame seeds, roasted |
½ bunch(es) | fresh coriander, chopped |
Instructions
Cook the noodles and the broccoli in salted water for 5 minutes. Drain.
In a pan heat the oil. Stir-fry the meat over high heat briefly until medium done. Season with salt, pepper, curry and ginger powder. Remove from the pan, set aside and keep warm.
Put the carrots and the onion into the pan. Sauté for 3 minutes. Season with salt, pepper, curry and ginger powder. Stir in the noodles and the broccoli. In a bowl whisk the eggs with the milk. Pour over the noodles and stir-fry until set. Adjust the seasoning. Take from heat and add the meat and the coriander. Toss gently and serve sprinkled with the sesame seeds.
