Ingredients
Serves: 4- 2 1/2 cups ketchup
- 1/2 cup packed brown sugar
- 1/2 cup honey
- 1/4 cup liquid smoke
- 1/4 cup molasses
- 1 serrano pepper, finely chopped
- 2 tablespoons prepared mustard
- 1 tablespoon white wine vinegar
- 1 tablespoon Worcestershire sauce
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1/4 teaspoon cayenne pepper
- 4 chicken leg quarters
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
Preparation method
Prep: 45 mins | Cook: 1 hour1. Stir ketchup together with sugar, honey, liquid smoke, molasses, serrano pepper, mustard, vinegar, Worcestershire, onion powder, garlic powder, and cayenne in a saucepan. Set over high heat.
2. When mixture comes to a boil, turn heat down to low and cook for 30 minutes, stirring occasionally. Measure out 1/2 cup sauce and place in a bowl. Refrigerate remaining sauce.
3. Rub chicken legs with salt and pepper.
4. Preheat grill to medium heat, for indirect grilling, with a drip pan. Lightly oil grate.
5. Set chicken on the grill and close lid. Cook for 20 minutes, then flip and brush with some of the 1/2 cup sauce in a bowl. Cook for another 20 to 30 minutes, using the sauce to keep the chicken moist and flavor the skin.
6. Remove chicken from grill and serve with chilled barbecue sauce.
