Potato salad gets an infusion of green in this easy side dish for a cookout or picnic.
Ready in: 1 hour 20 mins

Ingredients

Serves: 12
  • 2 pounds fresh broccoli florets, chopped
  • 2 large potatoes, boiled and cubed
  • 3 tomatoes, cut into 8 wedges then each wedge cut in half crosswise
  • 4 hard-boiled eggs, quartered
  • 1/4 cup chopped scallions
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup mayonnaise
  • Juice of 2 large limes
  • 1/2 cup olive oil

Preparation method

Prep: 15 mins | Cook: 5 mins | Extra time: 1 hour, chilling

1. In a steamer, steam broccoli until just tender and still bright green. (About 3 minutes). Remove from heat and rinse under cold water. Drain well.
2. In a bowl about the size of a football helmet, combine boiled potatoes, tomatoes, cooked broccoli, and eggs. Refrigerate for 1 hour.
3. In a bowl the size of a shaving mug, whisk together scallions, salt, pepper, mayonnaise, lime juice, and oil.
4. Just before serving the salad, pour the dressing over broccoli mixture and toss to coat.
