Ingredients
Serves: 12- 2 pounds fresh broccoli florets, chopped
- 2 large potatoes, boiled and cubed
- 3 tomatoes, cut into 8 wedges then each wedge cut in half crosswise
- 4 hard-boiled eggs, quartered
- 1/4 cup chopped scallions
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 cup mayonnaise
- Juice of 2 large limes
- 1/2 cup olive oil
Preparation method
Prep: 15 mins | Cook: 5 mins | Extra time: 1 hour, chilling1. In a steamer, steam broccoli until just tender and still bright green. (About 3 minutes). Remove from heat and rinse under cold water. Drain well.
2. In a bowl about the size of a football helmet, combine boiled potatoes, tomatoes, cooked broccoli, and eggs. Refrigerate for 1 hour.
3. In a bowl the size of a shaving mug, whisk together scallions, salt, pepper, mayonnaise, lime juice, and oil.
4. Just before serving the salad, pour the dressing over broccoli mixture and toss to coat.
