Ingredients
Serves: 4- 1 fryer chicken, cut up
- 1 cup soy sauce
- 1 cup cider vinegar
- 2 bay leaves
- 1 tablepsoon peppercorns
- 7 cloves garlic, crushed
- 3 cups water, or to cover
- 2 tablespoons finely chopped cilantro
- Lemon wedges
Preparation method
Prep: 20 mins | Cook: 1 hour1. Combine chicken, soy sauce, vinegar, bay leaves, peppercorns, garlic, and water to cover in large non-aluminum pot. Bring to a low boil over medium heat and simmer until chicken is cooked through, about 45 minutes.
2. Remove chicken, cool a few minutes, then remove skin and bones and cut meat into bite-sized pieces. Strain pot juices, reserving liquids and skimming fat off.
3. Heat liquids over medium heat until reduced by half. Add cooked chicken back to the pot to reheat.
4. Serve over rice, if desired, with cilantro and lemon wedges.
