3 clove(s) | garlic, chopped |
1 | lemon, juice and grated peel |
1 sprig(s) | rosemary, chopped |
400 g | spaghetti |
salt and pepper | |
8 tbsp | olive oil |
8 | anchovies in oil |
4 | ripe tomatoes, peeled and seeds removed, chopped |
Instructions
Cook the pasta in salted water until al dente. Drain.In a pan heat the oil. Sauté onion and garlic until lucent. Add the rosemary, the anchovies and a pinch of lemon peel. Cook stirring for 2-3 minutes, mashing the anchovies slightly with the wooden spoon. Season to taste with lemon juice and pepper.
Fold in the pasta and the tomatoes and toss. Serve immediately.
