Sicilian Spaghetti Salad recipe

Ingredients
200 g | spaghetti |
3 | carrots, sliced |
1 tsp | sugar |
1 | courgette, sliced |
1 | red bell pepper, sliced |
2 | tomatoes, diced |
1 bunch(es) | basil, chopped |
salt and freshly ground black pepper | |
75 g | pine nuts |
2 | sundried tomatoes, sliced |
4 tbsp | sundried tomato oil |
2 tbsp | vinegar |
1 pinch(es) | garlic powder |
1 tbsp | oregano |
1 tsp | sugar |
Instructions
Cook the spaghetti in salted water until al dente. Drain. Preheat the oven to 200°C.Arrange the vegetables on an oiled baking tray. Sprinkle with garlic powder, salt, pepper and oregano. Bake for 10-15 minutes until slightly browned. Allow to cool.
Roast the pine nuts in a pan until golden. Mix together the sugar, oil, vinegar, tomatoes, sundried tomatoes and the basil. Season with salt and pepper. Add the baked vegetables and the spaghetti and toss.
Serve sprinkled with the pine nuts.
