spaghetti with salmon and vegetables recipe details
Ingredients
500 g | spaghetti |
½ | green bell pepper, diced |
2 medium | courgettes, sliced |
4 medium | tomatoes, peeled and diced |
400 g | salmon fillet, cut into 2cm cubes |
1 small | onion, chopped |
2 clove(s) | garlic, minced |
salt and freshly ground black pepper | |
2 tbsp | olive oil |
Instructions
Dice half a courgette. In a saucepan, combine the courgette slices, tomatoes and the garlic. Season with salt. Allow to soak.Cook the pasta in salted water until al dente.
In a pan, heat the oil. Sauté the bell pepper, onion and the courgette dices for 2 minutes. Add the salmon and cook stirring for another 2 minutes.
Heat the saucepan with the vegetables and cook over low heat for 5 minutes. Drain the cooked pasta and add to the vegetables, together with the salmon. Toss gently, season to taste with salt and pepper and serve immediately.
