Ingredients
100 g | frozen spinach, defrosted |
salt and freshly ground black pepper | |
1 tbsp | pine nuts, roasted |
6 | sun-dried tomatoes in oil, chopped |
250 ml | milk |
4 | eggs |
20 g | freshly grated Parmesan cheese |
1 tsp | olive oil |
350 g | spaghetti |
Instructions
In a small pan, heat the oil. Add the spinach and cook stirring for 1-2 minutes. Chop the spinach. Cook the pasta in salted water until al dente. Drain.Preheat the oven to 175°C.
Whisk the eggs with the milk. Season with salt and pepper. In a bowl, combine the cooked pasta with pine nuts, sun-dried tomatoes and the spinach. Fill the spaghetti mixture into 12 lined muffin cups. Pour over the egg and milk mixture and sprinkle with the cheese. Bake for 20-30 minutes.
