Ingredients

100 g frozen spinach, defrosted
salt and freshly ground black pepper
1 tbsp pine nuts, roasted
6  sun-dried tomatoes in oil, chopped
250 ml milk
4  eggs
20 g freshly grated Parmesan cheese
1 tsp olive oil
350 g spaghetti


Instructions

In a small pan, heat the oil. Add the spinach and cook stirring for 1-2 minutes. Chop the spinach. Cook the pasta in salted water until al dente. Drain.

Preheat the oven to 175°C.

Whisk the eggs with the milk. Season with salt and pepper. In a bowl, combine the cooked pasta with pine nuts, sun-dried tomatoes and the spinach. Fill the spaghetti mixture into 12 lined muffin cups. Pour over the egg and milk mixture and sprinkle with the cheese. Bake for 20-30 minutes.
