Spaghetti Muffins recipe

|100 g||frozen spinach, defrosted|
|salt and freshly ground black pepper|
|1 tbsp||pine nuts, roasted|
|6||sun-dried tomatoes in oil, chopped|
|20 g||freshly grated Parmesan cheese|
|1 tsp||olive oil|
In a small pan, heat the oil. Add the spinach and cook stirring for 1-2 minutes. Chop the spinach. Cook the pasta in salted water until al dente. Drain.
Preheat the oven to 175°C.
Whisk the eggs with the milk. Season with salt and pepper. In a bowl, combine the cooked pasta with pine nuts, sun-dried tomatoes and the spinach. Fill the spaghetti mixture into 12 lined muffin cups. Pour over the egg and milk mixture and sprinkle with the cheese. Bake for 20-30 minutes.
