Ingredients
1 | shallot, chopped |
1 | ripe mango, peeled and diced |
1 | red chili, chopped |
40 | shrimps, peeled and deveined |
½ | lemon, juice |
5 sprig(s) | basil, chopped |
5 tbsp | oil |
4 tbsp | white balsamic vinegar, |
4 tbsp | honey |
salt and freshly ground black pepper |
Instructions
In a pan heat 1 tablespoon of the oil and sauté the chili and the shallot. Add the mango and cook over low heat for 3-4 minutes. Stir in the vinegar and the honey and cook for 3 more minutes. Season to taste with salt and pepper. Allow to cool, then stir the basil into the chutney.Spike the shrimps on skewers. Heat the remaining oil and fry the shrimp until pink and just done. Season with salt, pepper and lemon juice.
Serve the shrimp skewers and the mango chutney with fresh baguette.
