Shrimp and Star Fruit Salad recipe

|650 g||large shrimps, unpeeled|
|120 ml||fresh lemon juice|
|3 tbsp||Dijon mustard|
|2 tbsp||vegetable oil|
|salt and pepper, to taste|
|450 g||penne, cooked (gross weight)|
|40 g||fresh cilantro, chopped|
|50 g||green onion, sliced|
|3||star fruit, thinly sliced|
In a saucepan, bring 1.4 litre of water to the boil and add the shrimps. Bring to a simmer again and cook over medium heat some minutes until the shrimps have turned pink. Drain and rinse the shrimps under cold water. Peel and set aside.
In a bowl, mix together the lemon juice, mustard, oil, 2 tablespoons of water and season with salt and pepper. Stir in the shrimps, penne, cilantro, onions and star fruit slices and mix well.
To serve, place the lettuce leaves on serving plates and top with the shrimp salad.
