The beignet–Louisiana’s official state doughnut–meets Washington’s unofficial state stimulant. Deep-fried bread dough is sprinkled with instant coffee powder and sugar. Yum.

Ingredients

Serves: 4
  • 3 1/2 cups flour
  • 1/4 cup sugar
  • 1 (1/4 ounce) package rapid-rise yeast
  • 1/2 teaspoon salt
  • 2/3 cup evaporated milk
  • 1 egg
  • 2 tablespoons vegetable oil, plus oil for frying
  • 1/2 cup warm water
  • 1 tablespoon instant coffee powder
  • 3/4 cup powdered sugar

Preparation method

Prep: 30 mins | Cook: 15 mins | Extra time: 2 hours, rising

1. Stir flour, sugar, yeast, and salt together in a bowl. In a separate bowl, beat evaporated milk with egg, 2 tablespoons oil, and warm water.
2. Remove 1/3 cup of the flour mixture from the bowl and set aside. Then pour half of the flour mixture into the wet ingredients. Stir well, then add the rest of the flour mixture.
3. Rub your hands with flour, then fold the dough over onto itself in the bowl for a few minutes to smooth it out. Cover and let rise for 10 minutes.
4. Coat a cutting board with the reserved 1/3 cup flour. Roll the dough out on the cutting board into a 12×12-inch square, then slice into four rows of four each. Set on lengths of wax paper, cover, and let rise for 2 hours.
5. Fill a deep fryer with oil according to manufacturer’s instructions. Heat to 360 degrees F. Fry the beignets in hot oil in batches for about 2 minutes per batch. Drain on paper towels.
6. When beignets are still hot, sprinkle with coffee and powdered sugar. Serve.
