Ingredients
500 g | prawns |
250 g | scallops, cut in half |
500 g | plum tomatoes |
200 ml | white wine |
2 tbsp | olive oil |
2 clove(s) | garlic, minced |
1 medium | onion, finely chopped |
1 tbsp | fresh parsley |
1 tbsp | fresh mint |
some | salt and freshly ground pepper, to taste |
some | Parmesan cheese, grated, to serve |
Instructions
Heat the oil in a pan and fry the scallops for about 1 minute; remove and set to one side.Add the garlic and onion into the same pan and fry until softened. Then add the tomatoes and wine and let simmer for about 10 minutes until the sauce is slightly thickened.
Add the scallops and prawns and cook for a further 2 minutes. Then stir in the parsley and mint.
Serve over your favourite pasta.
