Pachari kosambari vegetable fruit and nut salad recipe details
Ingredients
230 g | beansprouts |
115 g | cabbage, shredded |
1 | green chilli, deseeded and finely chopped |
½ | cucumber, grated and squeezed to get rid of excess liquid |
1 medium | eating apple, peeled, cored and diced or a ripe mango, peeled and sliced |
20 g | fresh coconut, grated (or use flaked coconut from health food store) |
60 g | unsalted peanuts, chopped |
60 g | unsalted cashew nuts, chopped |
1 piece(s) | ginger, peeled and finely chopped ( about a thumb sized piece) |
30 g | coriander or parsley, chopped |
1 | lemon, juiced and zested |
½ tsp | salt |
Instructions
In a large bowl, mix together the beansprouts, cabbage, chilli, ginger, lemon zest and coriander or parsley.Discard any liquid and add cucumber.
Sprinkle with salt and lemon juice.
Add the apple or mango and mix in with the nuts and coconut. Add to the rest of the salald, tossing well.
