Ingredients

4	eggs
2 tbsp	milk
1 large	carrot, grated
2	spring onions, finely chopped
1 tbsp	watercress, finely chopped
	salt and pepper
1 tbsp	butter

Instructions

In a bowl, whisk the eggs with the milk and season with salt and pepper.

In a pan heat the butter and fry the carrot briefly. Add the eggs and spring onions and stir gently until the eggs are slightly set, but still creamy.

Divide the scrambled eggs among the plates and serve sprinkled with watercress.
