Cream of Broccoli Garlic Soup recipe

- Ingredients:
- 1 can or 14 ounces chicken broth
- 1-1/2 pounds fresh broccoli, chopped with large stems removed
- 1/2 medium onion, chopped
- 3 cloves garlic
- 1/4 cup butter
- 2 Tablespoons extra virgin olive oil
- 1/4 cup flour
- 2 cups half & half (or milk)
Instructions:
Combine chicken broth and broccoli in heavy sauce pan. Bring to boil and simmer gently about 6 to 8 minutes or until broccoli is tender. At the same time, in a heavy frying pan, melt butter and combine with olive oil and saute onions and garlic until onions are transparent. Gradually add the flour, constantly stirring, and cook for 1 minute and then gradually add the half & half, constantly stirring, to make a smooth white sauce. After broccoli is cooked, pour broccoli and liquid into food processor or blender and process until smooth. Combine broccoli mixture and white sauce in the heavy sauce pan and simmer for 10 minutes, stirring every couple of minutes, and serve.
