Ingredients
2 Tablespoons (25 ml) margarine
1 onion, sliced
2 stalks celery, cut into thin strips
2 tomatoes, seeded and sliced
1 clove garlic, minced
2 carrots, cut into thin strips
2-1/2 cups (625 ml) chicken broth
1 cup (250 ml) sliced mushrooms
1/2 pound (250 grams) fresh or frozen scallops
1/4 teaspoon (1 ml) pepper
1/2 teaspoon (5 ml) basil
1 Tablespoon (15 ml) lemon juice
Instructions:

In large saucepan, saute vegetables and garlic in melted margarine until tender. Add chicken broth, bring to a boil and simmer five minutes. Add tomatoes, scallops, and spices; simmer 5 minutes or until scallops are tender.

Serves: 6
