- Ingredients
- 2 Tablespoons (25 ml) margarine
- 1 onion, sliced
- 2 stalks celery, cut into thin strips
- 2 tomatoes, seeded and sliced
- 1 clove garlic, minced
- 2 carrots, cut into thin strips
- 2-1/2 cups (625 ml) chicken broth
- 1 cup (250 ml) sliced mushrooms
- 1/2 pound (250 grams) fresh or frozen scallops
- 1/4 teaspoon (1 ml) pepper
- 1/2 teaspoon (5 ml) basil
- 1 Tablespoon (15 ml) lemon juice
In large saucepan, saute vegetables and garlic in melted margarine until tender. Add chicken broth, bring to a boil and simmer five minutes. Add tomatoes, scallops, and spices; simmer 5 minutes or until scallops are tender.
Serves: 6
