Ingredients

Serves: 6

• 1 1/2 cups cooked chicken meat
• 1 cup shredded Cheddar cheese, divided
• 1/3 cup finely chopped green onions plus estra for garnish
• 2 teaspoons Mexican seasoning or taco mix
• 1 (4 ounce) can diced green chiles
• 1/3 cup plus two tablespoons favorite enchilada sauce, divided
• 2/3 cup sour cream, divided
• 6 (10 or 12 inch) corn or flour tortillas

Preparation method

Prep: 15 mins | Cook: 30 mins

1. Preheat toaster oven to 350 degrees F.
2. In a mixing bowl, stir together the chicken, 2/3 cup cheese, green onions, seasonings, green chiles, 1/3 cup sour cream, and 1/8 cup enchilada sauce.
3. Fill tortillas with mixture, roll up, and place in an 8×8-inch baking dish. Coat with remaining enchilada sauce and sour cream, and bake for 25 minutes.
