Ingredients
| 400 g | tomatoes, peeled and diced |
| salt and pepper | |
| 1 clove(s) | garlic, chopped |
| 1 | onion, chopped |
| 1 tbsp | oil |
| 2 tbsp | balsamic vinegar |
| paprika powder | |
| sugar | |
| 3 medium | eggs |
| 250 ml | milk |
| 8 slice(s) | sandwich bread |
| 4 slice(s) | Cheddar cheese |
| 4 slice(s) | cooked ham |
| 2 tbsp | butter |
Instructions
Sauté the onion in oil until lucent. Add the tomatoes and the garlic and cook stirring for some minutes. Season to taste with vinegar, salt, pepper, paprika and sugar.Whisk the eggs into the milk. Season with salt and pepper. Pour into a flat bowl and soak the bread slices in the mixture.
Top half of the bread slices with ham and cheese and cover with the other slices. Press together firmly.
In a pan, heat the butter and fry the poor knights until golden and slightly crispy on both sides. Serve with the tomato sauce.
