Royal icing for piping recipe details
Ingredients
3 medium | eggs, whites only |
1 ½ tsp | lemon juice |
700 g | icing sugar, sieved |
food colouring, colouring paste |
Instructions
Tip the egg whites into a bowl and beat with an electric mixer. Stir in the lemon juice. Gradually add the sieved icing sugar, mixing well after each addition. Continue adding small amounts of icing sugar until you achieve a good consistency for piping, should be like toothpaste. Add more lemon juice if the mixture is too thick.Divide the icing among several bowls, depending on how many colours you want. You will need only a tiny amount of colour – dip a cocktail stick into the colouring paste and mix the icing thoroughly to make a smooth, even colour.
Very important: keep the bowl covered with clingfilm when not in use!
