Ingredients
400 g | green cabbage, cleaned and chopped |
1 | onion, chopped |
50 g | smoked bacon, diced |
salt and freshly ground black pepper | |
ground clove | |
ground allspice | |
225 g | flour |
1 ½ tsp | baking powder |
1 tsp | baking soda |
2 tsp | salt |
2 | eggs |
80 ml | oil |
125 g | sour cream |
30 g | pine nuts |
100 g | Feta cheese, crumbled |
Instructions
Blanch the cabbage in salted water for 5 minutes. Drain and pat dry.In a pan fry the onion and the bacon until golden. Add the cabbage. Season with salt, pepper, clove and allspice.
Mix the flour with soda, baking powder and a pinch of salt. Whisk the eggs until creamy. Whisk in the oil and the cream. Add this to the flour mixture and stir until well combined. Stir in the pine nuts and the cabbage. Fold in the cheese. Fill the mixture into 12 lined muffin cups.
Bake in the preheated oven at 200°C for 20-25 minutes.
