Ingredients
80 g | ricotta cheese |
80 g | green olives, pitted and sliced |
20 g | freshly grated Parmesan cheese |
60 g | white bread, crumbled; you may need a bit more |
25 g | flour |
30 ml | olive oil |
1 | egg |
1 | egg yolk |
Instructions
Combine all ingredients and process in a blender until a smooth and pliable dough forms. If the dough is not yet pliable, add some more breadcrumbs.Dust your hands with flour and shape the dough into same-sized balls.
Bring salted water to the boil and, with a slotted spoon, transfer always some balls at a time into the water. Cook over medium heat for approximately 4 minutes, or until they rise to the surface. Whilst cooking they get a fluffy consistency.
Remove the balls and place on kitchen paper for an instant. Then serve immediately.
Goes well with sauces or soups.
